I use a iMac 27” (2017) and recently upgraded to MacOS Ventura. It is now clean and runs well but I am not sure how I can restore all my files and programmes (which previously had been regularly backed up through iTunes in the same computer (with High Sierra).
Please advise.

Your Mac files and applications were NOT backed up through iTunes, ever. All that iTunes would have backed up were your iOS devices.
If you erased your Mac drive and did not make a proper backup (like with Time Machine) to an external drive, or had your files saved in iCloud or other cloud service, they are GONE.

That was a backup of your iPhone, not your Mac.
