If I have the set-top box, do I also need to have a subscription in order to watch Apple movies?

You do need a subscription to watch any Apple TV+ content even if you have an Apple TV box.
You don't need a subscription to watch other Apple TV content that is not a part of Apple V+ but there are separate rental or purchase fees for that content.
