All I'm trying to do is sort my Favourites (Loved) playlist by least played (on iOS), or something to that effect. In other words, every time I start playing, I'd like it to be with songs I haven't heard in a while. Putting it on shuffle is an option, and I often do, but I'd like to give older songs not played in a while a chance to be heard.

I don't think it is possible on iOS. Each playlist has a More (three dots) menu that has a few options for "Sort By," but Last Played is not one of those options, nor is number of Plays.
It is easy to do in Music or iTunes on a computer, in case that helps.

Many years ago this was an option. I don’t think it’s an option anymore because I’ve been looking for it since then! This is a feature that should be brought back!
