Sleep Tracking intermittently not working since WatchOS 10.3 Update

Sleep Tracking has been intermittently not working since I updated my Apple Watch Ultra 2 to WatchOS 10.3 and my iPhone 15 Pro to iOS 17.3.

Some nights it tracks sleep, other nights it won't. Even when my Sleep Schedule and Wake Up Alarm is on and active, my iPhone is on charge, and my Apple Watch always has +60% battery before heading to bed it fails to track sleep. Sleep Focus always turns on automatically at the time I set it to as well. There is no coherent pattern to this, it is totally random, even with my consistent pre-bedtime Apple device routine (noted above).

I have tried the following trouble shooting steps every night to no avail:

  • Restart iPhone
  • Restart Apple Watch
  • Checked Sleep Schedule is active with Wake Up Alarm (iOS Health app)
  • Turned off Sleep Schedule, then turned back on

I also found that on occasion, my Sleep Schedule Wake Up Alarm will be displayed on my iPhone screen when it switches to Sleep Focus, but my Apple Watch would say 'No Alarm' in Sleep Focus. Yet, when I check the Alarm app on my Apple Watch, the Wake Up alarm is 'on'.

Has anyone found a solution to this problem?
