Turn off auto numbering in Pages documents
I want to create space between lines of text and Pages wants to number each new line.
I want to know how to turn off this feature.

Are you using numbered bullets?
To create a new line without a number, use a soft return.
On my version of Pages, that is shift return. More recently, Apple decided to change that keyboard shortcut.
Anyway, try Menu > Edit > Insert > Line Break.
Tested in Pages 13.1 under macOS Ventura 13.3.1
