I can't pair my Apple Watch with my new iPhone

I got a new iPhone and went on my watch and erased everything. However when I try to pair my new phone it says my watch needs an update. I hit update and then it just unpairs my phone. I tried to do some research and it says I need to unpair my watch from my last iPhone. But I turned that in so I can’t do this and I already erased everything and reset my watch. What do I do now?

Here are two ways to unpair your watch if you no longer have the paired iPhone:

Unpair and erase your Apple Watch - Apple Support

With a web browser, go to: https://www.iCloud.com and sign in with your Apple ID. Open Find My iPhone and select All Devices (at the top). Then click your Apple Watch, select 'Erase Apple Watch', and select Next until the device is erased. Finally click "X" next to remove your Apple Watch.
