Apple Watch pairing to new 15 phone

I just transferred info from my iPhone 12 to my new 15. I chose to delete all info from my old iPhone 12 once finished. I then went to pair my Apple Watch. It will not pair. All help says to delete the watch from the old phone but I can’t because everything has already been deleted from it. What do I do? My new phone just keeps saying “try again” which I’ve done many times
