My macbook pro 2012 can't connect recovery server.
I deleted my os file form my mac. When i try to reinstall my mac os i have see a error. Recovery server can't connect.

AFAIK recovery server has been lately flaky. Download the desired macOS from the link below.

Use another Mac, if necessary. Don't delete the last bootable volume before you have a backup plan...
