Your Mac is incompatible with Erase Assistant: Erase your Mac - Apple Support

I’ll assume an Intel-based Mac here.

Per Apple: you will want to do this instead: Use Disk Utility to erase an Intel-based Mac - Apple Support

What is it you want to erase?

If it is a file, then on an SSD/NVMe storage device, writing an erase pattern does not work, as the wear leveling algorithms in the storage always writes to a new sector, and never to the one holding your data. After the write, your data moves to a garbage collection queue, and eventually gets cleared, before being written again by the wear leveling algorithm.
