I have a Pages document that is mostly pictures on each page. I want to add a gallery title as the first page. I go into the document. I click on the Document icon in the tool bar and the "Document Body" feature is checked. How do I add and remove single pages in this document? Thanks.

From the Insert menu, not the Document panel. If you have existing pages in the current section, and you want a special page at the beginning of the document, then you need to insert another section, and then from thumbnail view, drag that section ahead of your existing section.
Then, isolate the next section by visiting Document panel : Section, and unchecking Match previoujs section.
Pages supports a single page orientation throughout the same document.
