Remember that posts on the Internet span a large timeframe and may refer to printing from Pages '09 and not the current (v13.2) pages. Not checking the date of Internet information to the current date can often result in misleading information.

and the current Adobe Acrobat Reader (not the Acrobat Pro product) has a improved Booklet printing feature on its print panel when opened from the Reader toolbar, not the File menu.
You may need a more advanced PDF imposition tool to arrange your PDF document pages precisely as you want them. The $20USD Create Booklet 2 in the Mac App Store has been around for decades and may provide you with the articulation of PDF pages that saves you considerable time and aggravation.
