No legal matter should ever be handle by email if you are the one infringed. There is a form for reporting that electronically on this page under "Intellectual Property and/or Other Claims":
If you want to REPORT a case of someone else infringing Apple, there is a link to an online form on the same page under, "Report Counterfeit or Knockoff Products" that also works for infringement of marks and copyrights.
I would suggest a regular, return receipt letter to their corporate address; I'd think an email is much too informal and does not offer proof of a receipt which should be used for legal matters.
