Does apple care bought in the US cover the UK?
If I were to buy a new iPad Air and Magic Keyboard in the US, on holiday, would the coverage extend when I return to the UK as I live there?

AppleCare+ plans are only valid within the country of purchase.
As such, if you purchase this additional coverage in the US, it will not be honoured in the UK or other countries. Similarly, device warranties will likely be an issue - as US warranties are limited to the US.
It is generally recommended that you purchase high-value devices in the country where you spend most time - as this may simplify warranty service should it be required.
Also consider that while US prices may initially appear more attractive, the quoted price does not include purchase tax - which must be added. When combined with import duty and VAT that may become payable upon import to the UK, the cost of your iPad may actually be more expensive than purchase in the UK. All quoted prices in the UK and EU include VAT.
