Multiple Monitors to iMac (2023) via Thunderbolt

I have tried connecting two monitors, one to each of my thunderbolt outputs on the iMac via an adapter to HDMI. Only one monitor is recognized at a time though I was told that I would be able to use both at the store. Any ideas as to what I might be doing wrong here?
