Changing the text select color in Pages

When you are editing a document in Pages, is there a way to change the highlight color for selected text in Pages? For instance, when you double-click on a word, that word is temporarily highlighted. Click again, and the highlight goes away.

So, is there a way to change the color of that highlighting? For some reason, mine is a strange orange color. I do not remember when or how I set it to this color. I have looked under the drop-down menus, but I can't find an item that would let me customize this color.

Just to clarify: I'm not asking about applying a highlight color to text in a document I am working on with others. I know that I can change that color by going to View > Comments & Changes > Author Color.

I'm using Pages version 11.1 on a Macbook Air that is running MacOSBigSur version 11.7.10.

In System Preferences : General : Appearance panel, you can change the Highlight color and that will change your document text selection color. Changing the Accent color will change the decorations in your application such as buttons, and selection increment indicators. Orange is not my favorite color either.

Pages v11.1 was intended for macOS Catalina, and Pages v12.1 is the last version available for Big Sur. If you want that, launch the Mac App Store and sign in with your Apple ID. Then press cmd+0 (zero) and the Purchased panel will appear. Pages should appear on it with some form of download or update indicator. Whether one or two dialogs, do not click Cancel and you will then be asked if you want to update Pages to the last compatible version of Big Sur.
