Apple website states that the Apple Watch SE (2) is compatible with iPhone X. Have bought it and given it to my son for his birthday today. He is trying to set up the watch to pair with his iPhone X - watch will not pair as it says it needs phone to have iOS17 or later. iPhone X will not update to iOS17.... so how do I pair the watch?

It appears that it has been updated to watchOS 10, it can only be paired with an iPhone XS or later with iOS 17.
A watch running watchOS 9 only requires an iPhone 8 or later with iOS 16.

Thanks - sadly, I don't think I can get in to the watch to find out? The watch shipped from Apple and was told it would work with iPhone X - I suspect they'd upgraded the watch to watchOS 10 as part of the refurbishment. I'll have to send it back I think. Thanks for taking the time to answer.
If you just got it from Apple Refurbished it will have OS10 installed.
As Dah.veed says you need a newer phone.
