Please check your iPhone model:

Go to Settings>General>About>Model number, and double tap there. You should see an "Axxxx" code (where xxxx are four numbers). Then read this list of iPhone 15 pro models:

A2848 (United States, Puerto Rico), A3101 (Canada, Guam, Japan, Mexico, Saudi Arabia, and U.S. Virgin Islands), A3104 (China mainland, Hong Kong, Macao), A3102 (other countries and regions).

If it is A3104 (manufactured for China, Hong Kong, Macao markets), it can only support 2 phisycal SIM cards, no eSIMs.

Since your iPhone has a physical SIM tray, I take it that it was not made for the U.S. market. I believe that iPhone 15 Pros in most other parts of the world would have a physical SIM tray and the ability to accept an eSIM or two.

About eSIM on iPhone - Apple Support

"eSIM on iPhone is not offered in China mainland. In Hong Kong and Macao, some iPhone models feature eSIM."

By any chance, was your iPhone made for the Chinese mainland, Hong Kong, or Macao markets?
