GarageBand latency with Arturia Keystep

I'm setting up a new Mac lab for my students. We have Macs that were purchased in 2021. They have 8GB of RAM. I'm having my students use GarageBand with Arturia Keystep midi controllers hooked up. There is significant latency when using these controllers. Enough that I can't justify using them. I've looked up how to combat this issue and all I see is people suggesting "lower the buffer." But that doesn't seem to be a setting I can adjust in GarageBand. Anyone have any other ideas to help?
