My Mac is running slow, especially for photo operations. I am only using a third of its storage and the RAM status when diagnostics were carried out was OK .
Any help would be great.

2017 21.5" iMac... with a 1TB HDD?
The 1TB HDD drive is known to be a performance bottleneck. Buy yourself an external USB-C SSD of your choice and reinstall macOS onto that. See Use an external storage device as a Mac startup disk - Apple Support
If your iMac was instead configured with an SSD or Fusion drive please install Etrecheck, run the diagnostics, and post the results using the 'additional text' posting option.
