I use an iPhone 11 Pro Max but I directed to YouTube to certify my logging and it say I tried login in will CPU iPhone OS 15_1 like Mac OS X, please does this mean someone is using my account?

No, it means Google can not properly identify your device, operating system or browser.
Note: the less Google knows about you, the better.
