In no particular order…
On recent Apple iPhone models with SIM, the SIM tray usually has the IMEI and not the serial number. Somebody with a SIM-equipped iPhone 15 can check that for you though, as Apple unfortunately doesn’t document that detail for iPhone 14 and iPhone 15. US folks can’t check that for you, as US iPhone 15 models are entirely eSIM and lack a SIM tray. That written, I’d expect IMEI and not serial number on an iPhone 15 SIM tray.
As another source for the serial number, check your sales receipt, if purchased from Apple or from an authorized reseller. Or in Settings, of course.
Being removable, the SIM tray can be swapped for another tray, and conceivably an incorrect IMEI can be present, or even a different IMEI can be engraved on the tray, as well.
more generally, serial numbers can be copied, and there can easily be one valid serial number and zero or more counterfeit devices with a copied serial number. The serial number alone doesn’t and can’t conclusively prove authenticity.
There are some pretty good iPhone clones around, too.

Did you click on the link which Katana-San provided? If you did, you'd have learned that the sim tray has not displayed the serial number for iPhone since iPhone 4s, which is now more than a decade ago.

Where did you purchase this phone? An iPhone 15 sold in the U.S. will not have a SIM card.
