I was signed with gmail as my Apple ID when I purchased this iPhone. Google has really become an issue in regards of my emails. Is there anyway google - gmail can be replaced or removed totally with Apple ID?

Yes, please go to settings, tap on your profile, then go to sign in security, and click edit and you can add or create your own Apple ID Change your Apple ID - Apple Support

What you do on other sites has nothing to do with your Apple ID. If you used your Gmail as a login on say, Facebook, you'll still continue to use Gmail as your FB login even after you've changed your Apple ID.
