I need to find where my apple pay has been used.

Specific details are not shared by the bank with Apple. You need to look at the bank’s mobile app or online at their website.
You can request some transaction data by requesting an Apple Cash Transaction Statement. Please follow this path,
iPhone > Wallet app > Apple Cash > More Button > Card Details > scroll down to Request Transaction Statement.
