Its been awhile since I updated my OS on my MacBookPro. If I update from Yosemite 10.10.5 to Catalina 10.15.7, will there be any adverse impact on my existing apps, documents, etc? Thanks for any information. Is there OS version I should consider updating to other than Catalina 10.15.7?

WRT Catalina, be aware that you must reformat your system drive to APFS format; and some (possibly many) of your old Yosemite-era apps that are '32-bit' will not run on Catalina.
You may want to consider just going to Mojave (10.14) if your Mac has a traditional HDD (not an SSD). That way, you could keep your HDD formatted as it is (MacOS Extended Journaled aka HFS+) and all your older 32-bit apps should still run fine.
It also depends on the exact model MacBookPro you have. As always, you can only upgrade to a compatible version of macOS. Look up your specific MBP in OWC's macOS Compatibility Guide to check how far you can go.

Back up your data and check the application compatibility table before proceeding. Catalina and above won't run 32-bit software and split the functions of iTunes up; use Go64 as well.
