Yes. AirPods, like other Apple devices, support smart charging and will stop charging at 100%. Actually, they also implement Optimized Charging, and will stop at 80%, then, depending on your usage pattern, will charge to 100% later before you are ready to use them.

You should always leave your AirPods in the case when not using them. All rechargeable Apple devices (in fact pretty much all rechargeable devices) will stop charging at 100%.
There is no need to try to micromanage battery life.
