Before I had to update the software on my iPad, I could rewind videos by following the instructions, such as touching and holding to go back a few seconds instead of ten whole seconds. Now, I can’t rewind except for ten whole seconds, which is awful. Is there any way to resolve this or do I have to downgrade the software again?

You can drag the ‘playhead’ (where the bright part and dim part of the timeline meet) forward or backward on the timeline. If you have stable hands/fingers, you should be able to use 1-second accuracy (see the time progress in the corners).
