Is fitness+ subscription bought in USA will still be accessible when I’m in India ?

You can continue to use your subscriptions while travelling. Your devices will remain signed into your own national App stores and your physical location from which you access the internet should not make any difference.
A Community Specialist answered a similar question in this thread about using an Apple Music subscription while the OP was travelling in a foreign country, giving the same advice.
