HELP "unset" keyboard shortcut(s)?

Literally every shortcut is turned off, but that I need to NOT have FULL ACCESS to my keyboard is counterintuitive. I like the shortcuts. I like dictation, and occasional "read this article for me", and as visual adjustments to font size and dark screens are invaluable at my age now.

Still unclear what the Accessability functions ARE, as "rotor, switch, and panel", without hints or help buttons to clarify USE, they remain unfamiliar and continue to get tripped-up by them. Although my experience feels "out of control" and sometimes scary, there is no doubt so many benifit from these settings and their recent integration accross all platforms, and it's an excellent foot forward.

There are better ways of functioning through Shortcuts and Keystrokes, and beyond my current knowing confidently, "if this, then that" reasoning that turn's OFF full access to me keyboard, to have things work for me.
