When you’re using FaceTime, you should be able to get a hold of anybody from wherever you’re at. My girlfriend who’s coming to see me from Australia I can’t seem to FaceTime her at the same time on her side she can’t seem to get a hold of me and it’s telling me I need to get another phone number or a different email address

I think we may be missing a number of facts. What's going on with the Gmail address? Are you sharing it with your girlfriend? Are you sharing an Apple ID.
What exactly is happening when you try to make a call? Are you able to FaceTime other people?
That warning is not telling you that you need a different device or a different email address. It's telling you you need a network connection, either cellular or WiFi to use FaceTime. Did you have an active data connection when you tried to use FaceTime? Depending on where you are, you may only be able to use WiFi.
