AppleCare is ONLY valid in the country where the device was originally sold. If it's a US phone, the warranty and AppleCare+ are only valid in the US.
As far as service goes, if you have service with a US carrier, contact them to find out where you can roam and what it will cost you. If you want to get service from a European carrier, check this list

Search the internet for 'iPhone eSIM carriers'. You should be able to find the Apple support document listing all of the carriers that support the eSIM in iPhones.
