I can’t find any guidance online on how to undo or remove the tiny guidance tags that come up on the ruler in Pages, such as the little inverted triangles or squares. How are they undone to return the text back to the non-formatted form? I tried dragging them, but some do not leave the ruler. I tried holding the control key, but no effect. Is this a case of reboot? Is there a glossary of shapes of all these tags?

Those are tab stops and the shape indicates the alignment: left, right, center or decimal.
The ones at the far left and right cannot be removed as they denote margins. They can be moved by dragging.
I think you've already discovered that tab stops can be removed by dragging them off the ruler and releasing.
