When editing a document, click on the upper right tab that says 'Document' next to 'Format'. Click the middle tab under the document tab titled 'Section'. Click on background and choose black. Then change the font color to white by clicking on 'Format' then 'Style' and choose white for the font dolor. Of course, if you don't want to submit your document as a black background, you'll have to reverse this before submitting. Hope this helps!

This may be easier on the eyes but you are fooling yourself as exporting this black background document in Pages to PDF, EPUB, or Word does not convert the document to black text on white background.
In Word v16.83, one will see a gray background with dark gray text on it. Good way to get your career lit up in a corporate setting when the document is sent to others. An EPUB will be white text on that black background, and a PDF will also be white text on a black background.
In Pages, you simply cannot emulate what Microsoft Word or LibreOffice Writer allow with dark backgrounds and white text being saved as regular white backgrounds with black text.
