It shows that I’m the organizer and my son’s phone shows that he’s the organizer under my account as well. He also has access to all my info like contacts. How do you fix this?

Sounds like you are sharing an Apple ID and as such both devices will show the same organizer. You should not be using your Apple ID on your son's devices. Apple IDs should not be shared for any reason.
Make sure your sons devices are logged in to his own Apple ID and not yours.
In Settings ➜ Apple ID (scroll to the bottom)
and Settings ➜ Apple ID ➜ Media & Purchases
