Apple uses placehold text on provided templates. One you have opened a new document using that business card template, click on the different parts of a business card and it will change to a salmon color. Enter your replacement text, and click Save. Then click on another part of a business card and repeat.

A simpler approach to business cards does not involve Pages at all. The Avery site has Avery Design & Print Online where you create your business card from a blank Avery template.
