There was a notification that popped up to begin a shareplay while watching a YouTube video. Because shareplay was a beside FaceTime, I thought that it meant that I was sharing my screen with my contact. Was I really? What Is the official way to stop sharing a shareplay?

SharePlay is essentially a service designed to synchronise streamed media between users. SharePlay does not directly share your media with others - but allows others individually streaming the same content to watch/listen to synchronised content while participating in a FaceTime call.

SharePlay can be disabled from your iPad's FaceTime settings:
Settings > FaceTime > SharePlay > SharePlay - set to OFF
