Is there a way to color code calendar entries on my iPad? I would love to distinguish different items without changing the entry label.

Different calendars have different associated colors. And you can create calendars and add same-named events to each, if you need more than what is already configured. Other than that, no. Calendar entries don't have a per-entry color setting.
