Nicknames in Contacts on iPhone

I have set nicknames for some of my contacts but it's always their normal name (in contacts list, in third party apps,...) i've enabled prefer nicknames in settings but it's still the normal name everywhere. is there a way to set it that the nickname is always the one used and the normal name is just saved in the contact? I don't want i.e. my parents to show up with their legal name.

Default in Contacts for phone number Many of my contacts have more than one phone number. I have IOS 14. The problem doesn't seem to be addressed in IOS 15. The directions for IOS 14 say to click the default under the contact's name and shows an image of the "default." However, neither my daughter's or my phone show anything. How do I set the default.
