When I updated my iPhone 15 to iOS 17.3.1 all of the gmail I had saved in all of the sub folders I created disappeared —in all of my devices—iPad, iMac ,and IPhone. They are not in Trash or All Mail. Has this happened to anyone else? Are they irretrievable?

It's not always the iOS update's fault! Many things can cause phone problems. If you tell people you think it's an iOS update, it might make it harder to fix the real issue.
