Deleted your account how exactly?

If it was completely deleted by Apple from existence per the following support document, nothing can be done anymore.

The iPhone is permanently disabled and Find My cannot be turned off.

Make sure that you sign out of all your devices to
avoid issues with apps that use your Apple ID account or iCloud. After
your account is deleted, you can't sign out of iCloud or turn off Find
My iPhone Activation Lock on your devices. If you forget to sign out, you might not be able to use your device when your account is deleted.

IF YOU DID SOMETHING ELSE, THEN PLEASE EXPLAIN WHAT YOU DID.

If you did do the above, but deletion is still processing, you can cancel the process:

When you request account deletion, you'll receive a unique alphanumeric
access code. Make sure that you keep this access code in a safe place. For a short period of time while your request is being processed, you can contact Apple Support, provide your access code, and we’ll help you cancel your request so you can resume using your Apple ID.
