Hi, i ordered my apple mouse in white a month ago and have only used it once, would it be possible to exchange it and pay the extra parth for the black colour mouse instead?

The following information from Apple - Legal - Sales Policies - U.S. Retail Sales should be helpful:
We believe you will be thrilled with the products you purchase from the Apple Store. In the unlikely event a product is not what you expected, you can return or exchange it with a receipt within 14 days of the date you receive the product from Apple. The product must be in its original condition with all of its included parts, accessories, and packaging and we’ll exchange it or offer a refund based on the payment method.
If your purchase from the Apple Store was more than 14-days ago, it isn't eligible for return. Sorry about that.

You can certainly try negotiating with Apple, but as Jack-19 has already told you, the free exchange period is over.
At this point, you basically only have the choice to purchase the black mouse. Whether or not, you want to sell your white one is up to you.
