My Apple Pencil won't recognise Hebrew letters when writing on iPad

Hi, I have recently bought an iPad and I've noticed a couple of things that I wondered if there's a way to fix:

1. My apple pencil won't recognize Hebrew letters when trying to write and will try to convert them to English.

2. There is a really small amount of Hebrew fonts available to write in through typing, is there a way to download more fonts?

2. You can add fonts with an app like AnyFont. But such fonts are only available in apps which have a font menu, like Pages.
