Is it possible to buy an iPhone in London and use it in South America?
Can I buy an iPhone in London, and take it to South America and keep it there? Will it work? of course I’ll get a SIM down south…

Yes, a phone purchased in London will work in South America as long as it is not carrier locked, however, if it ever needs to be repaired, it will have to be returned to the UK.
