I have 2 iPhones (an old and a new) which both carry data. I want to transfer the data from the old one to the new without overriding the content on the new iPhone ... but just add the data from the old. Can I do that? Thanks!

Do you mean "overwriting?" You can't do it by restoring a backup or using the transfer function, as that will overwrite the data. Have you enabled iCloud syncing on both phones for all the data types you want to have on the new phone? That should put all the same data on both phones without destroying any data.
