How can I correct a wrong data (Water) input in the Apple Health app ?

You can’t modify an entry. Yet you can delete the incorrect entry and add a correct one. In the Health app, go to Nutrition > Water > Show All Data > Edit and delete the entry. Then in Nutrition > Water, tap Add Data.
