Unable to pair my apple watch with my iPhone
I don’t know my email or password that I put for my Apple Watch and now I can’t pair my apple watch with my phone.

if it was me then first ting I would do is to read How to pair your Apple Watch with a new iPhone - Apple Support
if your issue is it's activation locked to another account then you have a problem
activation lock is not a thing on
the watch it's a theft protection on apples servers
it needs to be removed
if you don't know your appleID
password If you have forgotten your Apple ID password – Apple Support (UK)
then you will need the assistance
of apple Activation Lock -
