Trying to sign out of iCloud, iMessage, etc on my (2014) MacBook pro for recycling. But, every time I try to open one of these applications, I get the spinning wheel of death. Other options? Running El Capitan mOS still.
Try booting into Safe Mode to see if that makes any difference.
FYI, a 2014 laptop can run up to macOS 11.x Big Sur which is a bit out of date now, but if the performance issues are caused by third party software, then it may be an option so you can continue using the laptop if the performance issues are addressed.
See if you ca get a more modern Browser than Safari, like FireFox...

I'm talking about within system preferences, not using a browser
if it was me, and since you are going to recycle it anyways, I would just open the case and physically remove the HDD and destroy it.
Mac is too slow to sign out of accounts for recycling.
