I accidently moved my mail in All Inboxes (thousands) to Trash.
I immediately realized my mistake and used UNDO.
Mail app was stuck moving things around. Had to restart mail app.
As a result, two of my accounts have lost messages.
Messages are neither in Inbox nor in Trash on the server. Cannot see them on the ipad either.
Any ideas on where they can be? and Why they are lost?

My question is not about recovery. Most probably that will be difficult.
My question is what could cause the loss?
I would understand if some of the messages are in Inbox and others are in Trash.
But lost? Why would messages on the server be lost?
As likely to cause, we can only speculate as to what might have happened. The iPad Mail App can appear unresponsive when moving or deleting a very large number of Mail messages - exactly as you describe.
Interrupting the move process, by restarting the Mail App or iPad, can have unforeseen consequences - such as loss/deletion of data. In such circumstances, you would be best advised to allow the process to finish. Force-closing the Mail App or restarting the iPad should be avoided.
You will need the assistance of your Mail Provider - as only they will have the means to recover Mail deleted from their Mail Server..
