Mirroring iPhone screen to one monitor while using the other

Hi everyone, I have a kind of specific question and would love if somebody could help me figure out if this is possible to do. I have my MacBook Air connected to a second monitor via HDMI cable through a usb hub, and I want to mirror my phone screen to one monitor (either the second monitor or my MacBook screen) while being able to continue to use my other monitor to watch videos or do whatever. Is this possible? Whenever I try to do this my phone mirror takes up one screen and turns the other one black and renders it unusable. Any help or advice is greatly appreciated.
