You may just need to scroll right down to see past entries ?

You could try checking in the "Recently Deleted" folder.

If you use iCloud ... maybe check there...

Change your Journal settings on iPhone - Apple Support

says you can:

"Store your journal entries in iCloud

1. Go to Settings  > [your name] > iCloud.
2. Tap Show All, then turn on Journal.
