Sharing apps in devices

I am getting an iPhone 13 and already have a couple of iPads and an iPod. I don’t want all the apps from my iPads on the new phone. Is there an easy way to select the ones I want on new phone and also the iTunes I have on my iPod which are from CDs I possess and not purchased?

Previously with my iPads I have used QuickStart and had them side by side for all the apps to go on new device but this time I dont want all the apps on iPhone. I’m not very technical so easy method would help. I suppose I could use quick start then delete all unwanted apps but there might be a better method please.
